Cauliflower crisps? Is it like cauliflower pizza, a trend that blew up a couple years ago and now is resurfacing because Trader Joe’s just came out with a new pizza? As you may be wondering, it is but in a certain way it’s different because it’s a crisp not a soft pizza.

A few months ago I saw recipes for cauliflower pizza and they looked so delicious! It seemed like a typical pizza except it was low in carbs and healthier. Then recently Trader Joe’s came out with a cauliflower pizza crust that got everyone talking about it. I’m pretty certain you have seen it somewhere on social media right? Because of this, I got inspired to make cauliflower pizza.

Cauliflower pizza was my original plan though for this recipe but after making both a pizza version and a crisp version I decided the crisp version tasted the best. The nice crunchy crisp was amazing when combined with the melted cheese and the avocado green spread filled with lots of dill and tarragon. I thought, I should change this recipe to crisps instead of pizza!

The avo-green dressing was inspired from one of my favorite dressings ever – green goddess dressing! Green-goddess dressing is a nice sour yet creamy dressing that is perfect for sandwiches or toasts. My avocados were starting to go bad so I decided to use avocados to make avo-green dressing by replacing the mayo and yogurt in the green goddess dressing with avocado. The spread was a delightful thick spread that made the dish a unique meal because of the range of flavors. My favorite part was the crispy cauliflower because it made everything 100 times better. Hope you enjoy it too!

Servings: 12-14

Ingredients:

Cauliflower Pizza:

  • ½ large cauliflower
  • 5 tbsp gluten-free oats
  • 2 flax eggs (2 tbsp flaxseed + 6 tbsp warm water)
  • 2 tbsp flaxseed
  • 1 tsp garlic powder
  • ¾ tsp oregano
  • ½ tsp salt

Cheese:

  • 1 cup mozzerella cheese

Avo-Green Spread:

  • 2 avocados
  • 3 tbsp green onion
  • 2 tbsp cilantro
  • ½ tbsp dill
  • ½ tbsp tarragon
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • ⅛ tsp salt

First make the cauliflower crisp. Wash, break the cauliflower into small pieces, and then steam the cauliflower in a large pot filled with water until the cauliflower is soft.

Then make the flax eggs. Mix the flaxseed and water and let it sit for 15 minutes.

Drain out the water from the cauliflower using a clean kitchen towel or nut bag. Pour it into a food processor along with the rest of the ingredients.

Process then chill in the fridge for 30-45 minutes.

After the dough has chilled, measure two tablespoons of dough and place it on a baking sheet lined with parchment paper. Leave at least 7 inches between each crisp.

Then using wax or parchment paper, flatten out the dough into a flat, round crisp shaped that is ⅛ inches tall. You want a nice flat thin crust but not too thin that it will fall apart.

Bake it in the oven at 450°F for 15-20 minutes for both sides. Every oven is different so my oven does take a bit longer to bake so check every 5-10 minutes. Once the bottom of the crisp is golden brown, flip it then bake for five minutes less than the time it took to cook the bottom or until the crisp becomes golden brown and crispy. Then once the crisp become hard and crispy (but not burnt!) sprinkle some cheese on top, lower the temperature to the lowest setting, then bake it for an additional five minutes until the cheese melts.

While the crisp is baking, it’s time to make the avo-green spread! In a bowl, mix in all the ingredients and using a fork, combine it well. If you’re not a fan of dill or tarragon, you can lower the amount to 1 tsp instead of ½ tsp. Chill in the fridge until the crisp is ready.

Once the crisp is ready, take it out of the oven and spread a dollop of avo-green spread on it. Serve and enjoy!
