Sorry, I know it doesn’t really make sense and sounds bad, but I’m trying to be punny because today’s recipe is about the wonderful crispy and crunchy granola. (Hence why I’m trying to come up with punny/corny jokes to get us started.)

Ahhh granola. The perfect snack on top of anything like ice cream, yogurt, oatmeal… ooh and maybe even muffins and cake too! (ya, I know cake?? yes, it’s possible like carrot cake or simple fruit cake. I’m just thinking about cake because my cousin’s birthday was a couple days ago and I had AWESOME cake) I could go on but you’d probably start becoming hungry and immediately leave to the grocery store to grab some of these desserts. Okay, maybe I’m exaggerating a bit and going off on a tangent but you get the idea. Granola is everything.

Last week (I’m pretty certain it was last week… everything seems to go by too fast) I posted a recipe on overloaded chocolate coconut granola. Today’s recipe is derived from the recipe except it’s peanut butter and chocolate cups! Well, not exactly the creamy and melty peanut butter and chocolate cups that I always talk about but it’s the ingredients that make up this sweet dessert that is in this granola. Except it’s more of a “dry” version (at least for the chocolate part). The peanut butter on the other hand is a nice creamy spread that combines everything together. It literally is the glue for the granola.

Making granola in general is super easy and can be formed from literally anything. Just add some oats and healthy foods (like fruits or nuts) mixed in with a sticky and sweet substance and there it is! Oh, yes, you do have to chill so the granola sticks to each other but other than that there’s no hassle. You can, of course, bake the granola but I think baking is just more work (b/c I’m lazy most of the time and cannot wait eat it) Up to you though!

Prep Time: 5 minutes

Chill Time: 30 minutes

Servings: 1½ cups

Ingredients:

  • ¾ cup gluten-free old fashioned oats
  • 3 tbsp peanut butter
  • 2 tbsp maple syrup
  • 2 tbsp vegan mini chocolate chips

In a bowl, mix in all the ingredients together using a spatula and your hands. It’s important to get in all the creamy flavors of the peanut butter so everything is nicely spread. Chill for 30 minutes in the fridge.

Then you’re done! Top it on top of yogurt (optional) and preserve in fridge.
