I’m always craving something cold these days because it’s so hot and it’s summer! However it’s easy to get carried away with eating a whole can of ice cream then gain five pounds later. So I made these yogurt barks because it’s a great cold snack that is healthy and a perfect alternative to ice cream or chocolate bark.

I’ll be honest with you though. The last time I ate bark was about at least 5 years ago and that was only once in my life. I think it was chocolate mint bark I bought during the holidays. Just writing and thinking about this feels like a juxtaposition because during the holidays the weather is cold and everyone wants to warm up by the fire with a nice hot cocoa while right now the weather is super hot and humid with rain. But since this bark is a snack for the cold (I mean hot… this legit is a typo… I was too distracted and watching TV with droopy eyes lol) weather and is meant for a healthy alternative, I love it! When I crave something sweet and cold, I just reach for these barks. Plus with the crunchiness of the frozen water from the yogurt, I love it even more (because you’re getting hydrated in a way)!

Prep Time: 5 minutes

Freeze Time: 2-3 hours

Servings: varies (about 8-10 pieces)

Ingredients:

  • 1 cup plain yogurt – unsweetened
  • 5-6 tsp gluten-free old-fashioned rolled oats
  • 4-5 tsp raisins
  • 1½ tbsp maple syrup  (adjust accordingly to taste)

First in a bowl mix the yogurt and maple syrup together.

Oatmeal Raisin Frozen Yogurt Bark - Yogurt

On a pan lined with parchment paper, pour and spread the yogurt on top. Top with oats and raisins. Gently press down the raisins into the yogurt to ensure it sticks after freezing.

Freeze for 2-3 hours and break the bark into pieces. Freeze to preserve. Enjoy!
