How’s your week been going? My week has been super busy as I have been getting back on social media after my super long break. I also have other events going on so it has been quite a ride this week.

Since being back from Asia, I have been looking for ways to lose weight. Because, you know, after you travel you tend to gain a few pounds when you come home right? Also, I’ve always wanted to be in better shape and feel better about myself so I try to eat healthy but of course, occasionally bring in those carbs. Everyone loves carbs right?

So I came up with this spicy mayo veggie tortilla. This tortilla I bought (well not intended to buy) is healthy, low in calories, but full of fiber. I originally wanted to buy gluten-free tortillas (to try out the taste in order to make this recipe gluten-free) but the store did not have any so I ended up with these whole wheat tortillas. Honestly though, I haven’t had any tortillas or wraps in a loooonnnngggg time so I was craving for one. So I decided to put in basically almost the same ingredients I put in my vegan California rolls into this wrap, with of course more veggies! Go lettuce!

So if you’re looking for ways to eat a bit healthier but still be able to put in those carbs (shoutout to my carbs lovers) this is a great and simple tortilla perfect for any meal. (Well maybe not breakfast.) The mayo is not super heavy and you don’t even need to use the whole thing so it adds a great flavor to the wrap without making it too unhealthy. Hope you enjoy!

Prep Time: 5 minutes

Cook Time: 1 minute

Servings: 1 tortilla roll

Ingredients:

  • 1 tortilla
  • 2 lettuce leaves
  • 1 yellow cucumber slice
  • 1 mini cucumber
  • ½ avocado

Sauce:

  • 1 tbsp mayonnaise
  • ½ tsp sriracha

First, cook the tortilla on a non-stick pan. Prepare all the veggies.

Spicy Mayo Veggie Tortilla Wrap - tortilla

Scoop half the mayonnaise or a third of mayonnaise and spread it on the tortilla. Place the veggies on top.

Drizzle the rest of the mayo.

  • 1 tortilla
  • 2 lettuce leaves
  • 1 yellow cucumber slice
  • 1 mini cucumber
